End grain

  • Strength and longevity: The exceptional longevity and hardness of end-grain cutting boards resides in the vertical orientation of the wood fibers in relation to the surface. Arranged in this way, they are not cut by the blade of the knife. This is the assembly of choice for the traditional beech butcher's block intended for intensive use.

  • Preservation of the cutting edge of the knives: The edge of the blade dulls less quickly, because it does not cut the fibers of the wood.

  • Hygienic: When the blade cuts the food, it penetrates slightly into the material, thus separating the fibers of the wood. When it is removed, the fibers return to their initial position by closing and thus reducing possible contamination.

  • Aesthetics: the arrangement in end grain wood allows the creation of many different mosaics and patterns, kinds of marquetry in the mass with multiple possible wood species.
